Portobello Mushrooms & Wild Rice

Portobello Mushrooms & Wild Rice

1 package of sliced Portobello Mushrooms
3 stalks of green onions (finely sliced)
Olive oil
1 bag of Uncle Ben's Ready Rice, Long Grain & Wild (90 second microwavable)
4 oz. sour cream
Half bag of shredded parmesan
A tad of whipping cream or milk (probably 3 Tablespoons)

In a big skillet pour a couple Tablespoons of olive oil and heat on med heat. Cut up the Portobello mushrooms into chunks and put into the skillet along with your sliced green onions. Stir until fully cooked. Meanwhile, microwave your wild rice for 90 seconds according to directions (you cook it right in the bag!). When the mushrooms are cooked, add cooked rice to skillet. Then add half bag of parmesan, 4 oz of sour cream (half of an 8 oz container) and a few Tablespoons of whipping cream. Keep stirring until the parmesan is melted. Serve.
